Beef Liver Pate

Liver is one of the most nutrient dense foods there is. It is a rich source of vitamin A in the form of retinol, which is readily available for the body to use. This is a super easy recipe and a fantastic way to incorporate liver into your diet as a healthy snack for a quick pick me up.

Ingredients

 ½ grass fed beef liver
 1 medium onion, diced
 1 cup coconut oil
 23 tbsp minced garlic
 1 tbsp apple cider vinegar
 1 ½ tbsp fresh rosemary
 1 tbsp fresh thyme
 pinch of salt and pepper to taste

Method Steps

Dice the onion and slice the liver into thin slices.

Heat the oil (2 tablespoons) of choice in a fry pan.

Fry liver and onions, until onions are caramelized and the liver is cooked through.

Add the garlic, apple cider vinegar, rosemary and thyme.

Cook for a few more minutes until the liquid from the vinegar is reduced.

Remove from heat and let it cool for 5 minutes.

Transfer to a food processor with 1/4-1/2 cup of the oil.

Process until smooth, adding the remaining oil as you go, until moist and creamy.

Portion into 2 serves, put one portion in the fridge and one in the freezer.
