Beef jerky offers a huge protein hit to keep you feeling full and full of energy throughout the day. It is an easy snack to grab when you are on the go, and doesn't require refrigeration. It is easy to change the flavour to suit your tastes, but this one is only uses honey as a sweetener and is a great addition to kids lunchboxes.

Ingredients

 topside roast
 2 tbsp crushed ginger
 1 tbsp wholegrain mustard
 1 tsp onion powder
 ½ tsp cayenne pepper powder
 6 tbsp Worcestershire sauce
 6 tbsp tamari or soy sauce
 1 tbsp shiracha
 1 tbsp tomato sauce
 1 tbsp ABC ketchup manis
 1 tbsp mustard powder
 2 tbsp honey
 ½ tbsp cumin powder
 2 tbsp crushed garlic
 1 tbsp dijon mustard
 1 tbsp curry powder
 1 tbsp garam masala
 pepper
 3 bay leaves

Method Steps

Take your beef roast and trim off as much fat as possible.

Now slice the beef into thin strips and use a meat hammer to fund out the meat. Cover and place in the fridge.

Now to make the marinade, place all ingredients in a bowl and mix well.

Take meat out and place into the marinade mix. Let sit at least over night, if not a few days.

Place meat on a dehydrator trays making sure they are laying flat and not overlapping or touching each other.

Turn dehydrator onto 52 degrees C for aprox 8 hours checking occasionally. You may need to rate your trays.

To check meat for dryness take a piece out and let it cool, it's hard to tell properly when the meat is still warm. It should be pliable but split when bent.

If you dont have a dehydrator you can use an oven at the same temp with the door slightly open. You can add all different types of seasonings and things depends on what you like.

When cooled down store into an airtight container and place in fridge or cupboard.
